Carrots and bubbly: my spring market!

You know me well enough by now to know about my love affair with the cuisine of Alsace. That’s why you’ll always find me in the middle of a market! As I roam through the stalls, I fall for vegetables full of flavour, my heart melts for local specialities, and I say "ìch hà di garn" * to the producers.

Markets in Alsace
5 good reasons for a visit

N°1 - Find all the flavours that make up the soul of Alsatian gastronomy: the distinct aroma of authentic sauerkraut or creamy flammekueche, and of course market essentials like a bunch of asparagus, a little jar of mustard, or a classic pretzel.

N°2 - Enjoy a wide variety of markets. Traditional, organic, or atypical: foodies will never leave empty handed!

N°3 - Introduce little chefs to a new world of sensations. Small taste buds, big discoveries.

N°4 - Get valuable advice from local producers. Cooking methods, food pairings, or seasonings: they love sharing their tips!

N°5 - Experience it first-hand: spring + Alsace + market = the perfect Sunday morning.

What should I put in my basket?

Our approved list:

  • Fruit: apples, strawberries, currants, cherries, rhubarb
  • Vegetables: turnips, lettuce, carrots, spring onions, spinach, artichokes, radishes, endives, button mushrooms, watercress, lamb’s lettuce

 

It’s a bit early for:

  • Fruit: apricots, blackberries, raspberries, white and yellow peaches, wild peaches, blueberries, mirabelles, plums, quetsche d’Alsace plums
  • Vegetables: courgettes, aubergines, cabbage, fennel, cucumbers, parsley, peppers, Romanesco broccoli, potatoes

The recipe!
Rhubarb pie

Ingredients:

1 kg rhubarb
250 g flour
125 g butter
3 eggs (1 yolk, 3 whites)
80 g sugar
Pinch of salt
5cl cold water

 

Method: 

Step 1 - Make the shortcrust pastry by combining the flour, butter, egg yolk, 30 g of sugar, salt, and water. Let the dough rest for 20 minutes.

Step 2 - Peel and dice the rhubarb, leave raw or steam if desired.

Step 3 - Roll out the dough, press into a buttered pie tin, and fill with the diced rhubarb.

Step 4 - Bake at 200 °C for 30-35 minutes or until almost cooked.

Step 5 - Whisk the egg whites until stiff peaks form, then sweeten with the remaining 50 g of sugar.

Step 6 - Pull the pie towards the front of the oven, top with the egg whites, and slide it back in for a few more minutes until golden brown.
